What you need:
* 4 chicken breasts, poached and shredded * 3 Cameo® apples, diced * 1/4 c. golden raisins * 1/4 c. pine nuts. toasted * 1/3 c. fresh basil, chopped * 1/3 c. mayonnaise * 1 tsp. lemon juice OR cider vinegar * 1 tsp. salt * 1/2 tsp. ground pepper
What to do:
1. Combine chicken, apples, raisins, pine nuts and basil in large bowl. 2. Combine mayonnaise, lemon juice, salt and pepper in small bowl; stirring well with a whisk. 3. Add mayonnaise mixture to chicken mixture, tossing well to coat.
* Substitution: Remove skin from 1 rotisserie chicken. Pull light and dark meat off bone; separate into shredded pieces. Place in bowl; proceed with recipe as directed.
