What you need:

+ 2 fully ripened avocados
+ 1 c. diced plum tomatoes
+ 1 medium onion, chopped
+ 1/2 c. chopped cilantro
+ 1 Tbsp. finely chopped serrano or jalapeño chile
+ 1 Tbsp. extra-virgin olive oil
+ 1 Tbsp. lime juice
What to do:
1. Halve, pit and peel avocados; dice.
2. In a large bowl, combine tomatoes, onion, cilantro, chiles, olive oil, and lime juice. Stir in avocados. Season with salt to taste.
3. Cover bowl tightly with plastic wrap; refrigerate about 1 hour to blend flavors.
YIELD: about 3 c.
