Honey Nut Stir Fry

Steaming hot jasmine rice Egg Rolls Saké or hot tea Prep Time: 10 Min. Cook Time: 10 Min. What you need:

+ 1 lb. pork, (steak or loin) or boneless chicken breast /strips/tenders
+ 3/4 c. orange juice + 1/3 c. honey + 3 Tbsp. soy sauce + 1 Tbsp. cornstarch + 1/4 tsp. ground ginger + 2 Tbsp. vegetable oil, divided + 2 carrots, diagonally cut + 2 stalks celery, diagonally cut + 1/2 c. cashews or peanuts + hot rice What to do:
1. Cut chicken or pork into thin strips and set aside.
2. In a small bowl, combine orange juice, honey, soy sauce, cornstarch and ginger; mix well. Heat 1 Tbsp. oil in a wok or large skillet over medium heat. Add carrots and celery; stir-fry about 3 min. Remove vegetables and set aside. 3. Pour remaining oil into skillet. Add chicken; stir-fry about 3 min. Return vegetables to skillet; add sauce mixture and nuts. Cook and stir over medium-high heat until thickened. Serve over hot rice. Note: Honey should not be fed to infants under one year of age. Honey is a safe and wholesome food for children and adults.
