Smoked Fish Stuffed Peppers

What you need:

* 6 oz. smoked haddock or whiting, skinned and cubed
* 4.5 oz. pkg. savory golden rice with peas, sweet peppers, carrot and onion
* 2 large red bell pepper
* 4 Tbsp. olive oil

What to do:

1. Pre-heat the oven to 350°F.
2. Cook the savoury rice according to pkg. instructions. Stir fish into cooked rice.
3. Brush oil over the base of an 8x8" baking dish. Cut peppers in half lengthwise and place them inside. Stuff the rice and fish mixture equally into the peppers and drizzle remaining olive oil over the top. Bake in the oven 30-40 min, until golden.
4. Serve with a green salad.
