
Caribbean Grilled Catfish with Tropical Fruit Salsa

1 tsp. minced garlic |
1/2 tsp. salt |
1/2 tsp. ground black pepper |
1/4 tsp. ground red pepper |
4 catfish fillets (about 6 oz. each) |
2 tsp. olive oil |

Tropical Fruit Salsa: |
2 c. mango and/or papaya |
2 Tbsp. chopped cilantro |
1 Tbsp. EACH jalapeno pepper and minced green onions OR chopped chives |
2 Tbsp. fresh lime juice |
1 Tbsp. honey |
Directions:
1. Preheat grill or broiler.
2. In a small bowl, combine garlic, salt and black and red peppers. Brush one side of each fish fillet with 1/2 tsp. olive oil and sprinkle with spice mixture.
3. Grill or broil on a rack 4 inches from heat source for 4 to 6 min. or until the fish is cooked through. Serve with Tropical Fruit Salsa; if desired, garnish with chives.
Tropical Fruit Salsa:
1. In a small bowl, combine 2 c. each mango and/or papaya, 2 Tbsp. chopped cilantro, 1 Tbsp. each jalapeƱo and minced green onion or chives; stir in 2 Tbsp. lime juice and 1 Tbsp. honey. YIELDS: About 2 c.
TIP: You may also purchase prepared tropical salsa instead of making it.
