Spanish Skillet Supper

| 1 (5.6 oz.) pkg. Spanish rice mix |
| 2 c. water |
| 1/2 c. thick and chunky salsa |
| 4 eggs |
| 1 c. reduced fat sharp cheddar cheese |
Directions:
1. In a large skillet over medium-high heat, mix rice with water; bring to a boil.
2. Reduce heat; simmer covered until rice is tender, about 4 min.
3. Add salsa; stir to mix thoroughly.
4. Reduce heat to low. With spoon or spatula, make 4 indentions in rice mixture. Break 1 egg in each hole. Cover; cook until whites are completely set, and yolks begin to thicken but are not hard, or about 3-5 min.
5. Top each egg with 1/4 c. cheese and serve.
