
Slow Cooker Sweet and Sour Chicken

1 medium onion, sliced |
1 medium carrot, peeled, sliced |
1 medium celery stalk, sliced |
6 boneless skinless thighs (1-1/2 lb.), cut into bite-size pieces |
1/3 c. firmly packed brown sugar |
1/3 c. catalina dressing |
1/4 c. soy sauce |
1 tsp. fresh ginger root, grated |
1 can (8-oz.) pineapple chunks, drained, liquid reserved |
1 Tbsp. cornstarch |
1 medium green pepper,sliced |
1 medium red bell pepper, sliced |
5 c. MinuteĀ® White Rice, hot cooked |
Directions:
1. Place onions, carrots and celery in slow cooker; top with chicken.
2. Add combined brown sugar, dressing, soy sauce and ginger. Cover with lid.
3. Cook on LOW for 7 to 8 hrs. (or on HIGH for 3-1/2 to 4 hrs.). During last 30 min. of cooking time, increase to HIGH. Stir cornstarch into reserved pineapple liquid; add to slow cooker along with the pineapple and peppers. Cook 30 min. or until peppers are crisp-tender and sauce is thickened. Serve over rice.
