Pizza Pescatori

Ingredients
6 oz. smoked haddock or cod fillet, skinned and cubed
7 oz. diced tomatoes
1/2 tsp. oregano
2 Tbsp. tomato puree
7 in. refrigerated pizza crust
1/2 green pepper, seeded and sliced
1 small onion, thinly sliced
4 Tbsp. cheddar cheese, shredded
black pepper, to taste

Directions:

1. Preheat the oven to 425°F.

2. Place the tomatoes in a small bowl. Season with the oregano and pepper.

3. Spread tomato puree over the pizza crust. Top with the tomato mixture.

4. Add the green pepper, onion and cubes of fish. Sprinkle cheese on top.

5. Place the pizza onto a baking tray, and cook for 15-20 min. until golden brown.

6. Serve with a green salad and garlic bread.
