Sweet and Spicy Thai Pork Loin

| 2 lb. Pork Loin, cut into 1-in. cubes, trimmed |
| 1 yellow onion, chopped |
| 1 red bell pepper, chopped |
| 1 c. long, thin beans, OR string beans, cut into 1-in. lengths |
| 1 c. Sweet Thai chile sauce, (like May Ploy or Thai Kitchen) |
| 1/2 c. chicken broth, reduced-sodium |
| 1/2 tsp. salt |
| 1/4 c. water |
| 1 Tbsp. basil leaves, torn |
| 1 Tbsp. mint leaves, torn |
| 1 Tbsp. cilantro leaves, torn |
Directions:
1. Combine all ingredients, except fresh herbs, in a crock pot and cook at low for 4 -5 hr. (or on high for 2-2 1/2 hr.).
2. Just before serving, add fresh herbs and check seasoning. Transfer pork and sauce to a serving bowl. Serve over rice or Asian noodles.
