Smoked Haddock Gnocchi

Ingredients
1 lb. smoked haddock or smoked whiting fillets, skinned and cubed
12 oz. pkg. spinach potato gnocchi or pasta
2 Tbsp. oil
2 green onions, chopped
1 clove garlic, crushed (optional)
4 oz. sliced green beans
half a jar cheese or Carbonara sauce
black pepper

Directions:

1. Cook the gnocchi or pasta according to the pkg. instructions. Meanwhile, heat the oil in a pan; add the spring onions, garlic and green beans. Cook for 1-2 min.

2. Stir in the sauce, bring to the boil, reduce the heat and add the fish. Cover and cook for 8-10 min., occasionally stirring gently.

3. Add the prepared gnocchi and season. Serve with a crisp salad.

* For larger appetites serve with crusty granary, French or pita bread.
