Black Bean Chili

Black Bean Chili

Courtesy of National Pork Board 4 Servings • 10 Min. Prep Time • 8 Hr Cook Time • Let slow cook during the day and come home to a hearty chili. Serve with tortilla chips and a green salad.
Ingredients
1 1/2 lbs. boneless pork, cut into 1/2-in. cubes
2-15 1/2-oz. cans black beans, drained
1 c. chopped onion
1 c. chopped yellow bell pepper
1 c. thick and chunky salsa
1-15 1/2-oz. can diced tomatoes, do not drain
2 cloves garlic, minced
1 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. crushed red pepper

Garnish: sour cream, shredded Cheddar cheese (optional)

Directions:

1. Combine all ingredients except garnishes in 3 1/2-quart slow cooker.

2. Cover and cook on low heat setting 7 to 8 hrs.

3. Top individual bowls with sour cream and Cheddar cheese.
