Mexican Rice (Gluten-Free)

| 1/2 c. chopped onion |
| 1 clove garlic |
| 2 Tbsp. oil |
| 1 c. uncooked white rice |
| 2 c. beef broth |
| 1 tsp. chili powder |
| 1 tsp. cumin |
| 1/4 c. tomato sauce |
Directions:
1. Sauté onion and garlic in oil briefly in medium saucepan.
2. Add rice and sauté lightly.
3. Stir in broth, chili powder, cumin, and tomato sauce. Bring to a rapid boil.
4. Reduce heat and simmer covered 25 minutes or until all of the liquid is absorbed.
